Restricted Area Experience


Step inside Toyosu Market’s restricted wholesale area, a space normally closed to the public. This takes place during our regular sourcing routine, offering direct insight into how seafood is selected for our Omakase restaurant in Tokyo, from seasonality to fat content and texture.

Moving through the market alongside the chef, you will witness the selection process firsthand and interact with expert vendors who supply our Chef’s Table, as well as some of Tokyo’s and the world’s top restaurants.
From there, we move through Toyosu’s vegetable and dry goods market, where you can explore and purchase unique Japanese ingredients encountered along the way.

If you wish, we can also recommend a traditional Toyosu breakfast, where you can enjoy sushi prepared with the same level of freshness and attention to quality.

The experience will be documented and shared to you, capturing moments as you explore.

Restricted Area Experience + 
Private Chef Masterclass


Following the sourcing at the market, the experience continues with a private chef-led session and tasting.

Together with the chef, you select ingredients directly from trusted Toyosu vendors, observing how quality, seasonality, and intended use influence each decision. The purchasing process reflects how ingredients are chosen and handled in a professional kitchen.

At our Chef’s Table, in a more intimate setting, the Chef demonstrates techniques such as fish filleting, ike-jime, and aging methods, sharing insights drawn from daily practice. The focus remains on the transformation from ingredient to dish.

The experience concludes with a relaxed meal featuring preparations based on the ingredients selected together, creating a direct connection between sourcing and dining.

Bespoke Seasonal Tasting [NEW!!]


Enjoy a tasting session built around the finest ingredients sourced directly from Toyosu Market and our trusted suppliers across Japan.

If an early visit to the market is not preferred, you can join us directly for lunch: we take care of the sourcing and preparation.

The experience is flexible and can be shaped around your preferences. We can focus on specific ingredients or themes such as tuna, micro-seasonal fish, sea urchin, or extend beyond the market with wagyu, sansai (mountain vegetables), exploring individual products in depth. The format remains open, adapting to dietary needs.

For an added layer of exclusivity, a wagyu tasting can be added, featuring rare and prized cuts from our trusted supplier.

Your lunch becomes a full-course tasting menu, taking place at our Chef’s Table and shaped around the ingredients and direction chosen for the day: a private invitation into our kitchen.
